Watermelon Salsa

Ingredients
Seedless Watermelon, 4 Cups
Red Onion, 1/2 Onion
Mint Leaves, 1/2 Cup
Jalapenos, 1-2 Peppers
Lime, 1 Lime
Optional: Fresh Cilantro Leaves
Directions
Ingredients
- 4 cups seedless watermelon, diced
- 1 half red onion, diced
- 1/2 cup chopped mint leaves
- 1-2 jalapenos, seeded and diced (add more or less to taste)
- 1 lime (zest and juice)
- 2/3 cup chopped fresh cilantro leaves (optional)
Directions
- Dice watermelon into small cubes.
- Dice onion and jalapeno (seeded), then chop mint leaves.
- Add all ingredients to a mixing bowl and add lime zest and juice.
- Toss together until combined.
- Serve and enjoy! This can last in the fridge for up to 2 days.
