Ingredients
Seedless Watermelon, 4 Cups
Red Onion, 1/2 Onion
Mint Leaves, 1/2 Cup
Jalapenos, 1-2 Peppers
Lime, 1 Lime
Optional: Fresh Cilantro Leaves
Directions

Ingredients

  • 4 cups seedless watermelon, diced
  • 1 half red onion, diced
  • 1/2 cup chopped mint leaves
  • 1-2 jalapenos, seeded and diced (add more or less to taste)
  • 1 lime (zest and juice)
  • 2/3 cup chopped fresh cilantro leaves (optional)

 

Directions

  1. Dice watermelon into small cubes.
  2. Dice onion and jalapeno (seeded), then chop mint leaves.
  3. Add all ingredients to a mixing bowl and add lime zest and juice.
  4. Toss together until combined.
  5. Serve and enjoy! This can last in the fridge for up to 2 days.
